I believe that functionality exists already if you are using Plex; via RSS sync.
Really depends on what you want out of the system, what you can spend and how much time you want to spend on it.
My old z390 itx system has a 16x PCIE to 4x m.2 card - leveraging an m.2 to 5x SATA adaptor with the built in SATA adaptors has given it plenty of space.
Considering I can grab m.2 to 6 SATA adaptors and fill the remainder of the slots that’s a decent chunk of drives from a single PCIE x16 slot.
Software is another kettle of fish and a good way to timesink, I’d rather not give too much of my personal experience as there are so many ways to skin that cat.

Ahh man that’s a pain, my old notebook has no sata and only 32gb of emmc (which I’m tempted to remove and add a larger chip), but it’s only being used for my 3D printer so it’s not really a pressing need yet.
Try booting your installer without UEFI - I have an old x99 WS IPMI board I spun up with NixOS and has so many issues using the EFI / UEFI installer.
Admittedly that thing pulls 60w at idle, so promptly turned it off 😅

Depends on the material. ABS would be a decent material for this application - as long as you have a decent enough setup to scrub / clean the air in the chamber / room.
PLA would have a hard time in that position, PETG might be OK, Nylon may creep after too many heat cycles. Depending on how hot those parts get this is.
