  • I’m very gender fluid even though I’m straight af. I don’t even know what the hell’s going on with my gender identity to be honest I don’t know the magic words and I don’t even care because I accept myself for who I am finally. I would have loved to know it’s okay to not align myself or portray myself as the stereotypical man because I don’t feel that way inside. Basically I’m agreeing with you but in my own way.

    The best thing that ever happened to me was finishing off some caramelized pork slabs in the cast iron pan…

    I put some aged white cheddar, turn the heat off, and put the top of the pan on just to do a quick cheese softening… Well of course I forgot about it and left the room

    30 minutes later I came back when my stomach was rumbling, lifted the pan lid and realized that the cheese had melted off the pork and onto the pan. There was just the perfect amount of latent heat, by complete fluke, to perfectly caramelize the aged cheddar into a crispy, greasy disc at the bottom of the cast iron pan.

    I have tried to recreate that by frying cheese, and I have never been able to capture that moment of pure tastebud joy and bliss.

    And I’m hypocritical, because I have traveled extensively

    Most people, and that includes myself, won’t even enjoy what is available in their own region

    How does it make sense to go on a trip to Banff to go skiing, when there’s a slightly smaller mountain 45 minutes away that you just won’t bother going to? There’s 7000 museums in every city; There is natural beauty all around… go!

    Go these places first, and once you’ve exhausted what is available next door, then expand horizons
